Chilled Curried Apple Soup

Serve 6-8

15g butter

1 onion, chopped

1tsp curry powder

1kg green apples, peeled, cored and chopped

1L chicken stock

175ml cream

Juice of 1 lemon

Salt and pepper to taste

In a sauce pan melt the butter and sweat the onions.

Add the curry powder and cook 1 minute.

Add the apples, chicken stock and salt and pepper.

Bring the mixture to the boil and simmer covered for 1 hour.

Blend the soup and strain through a sieve and leave to cool.

Add the cream and lemon juice. Season to taste.

Serve chilled in chilled bowls.
