A friend returned from a visit to Kalahari Plains Camp and could not stop going on about the heavenly apple cake she’d enjoyed at tea one day. So much so, we felt compelled to winkle the recipe out of manager Lops Rampeba to share with you. Let us know how it turns out if you decide to make it!

Honey and Apple cake recipe KHP

Apple and Honey Cake


2 apples, peeled, cored and thinly sliced
250 ml brown sugar
30 ml ground cinnamon
420 g cake flour
15 ml baking powder
5 ml baking soda
2.5 ml salt
2.5 ml ground cloves
2.5 ml allspice
1.25 ml ground ginger
250 ml vegetable oil
250 ml honey
3 eggs
5 ml vanilla extract
250 ml warm coffee
125 ml apple cider
Deep-fried apple slices dusted in cinnamon sugar, to garnish
Thick cream, to serve


Preheat oven to 190° Celsius and lightly grease a 25cm round cake tin. Line the bottom with baking paper. Mix the apple slices in a medium bowl with 30 ml of the sugar and 10 ml of the cinnamon, and set aside. Combine the flour, baking powder, baking soda, salt and spices in a large bowl with the remaining cinnamon. Make a well in the centre and add the oil, half the honey, the remainder of the sugar and the eggs, vanilla, coffee and apple cider. Mix the ingredients well and spoon one third of the batter into the prepared tin. Top with half of the apples and then repeat with another one third of the batter, followed by the remaining apples and the final third of the batter. Bake the cake for one hour – the skewer should come out clean. Once out of the oven, drizzle with the remaining honey while still warm. Top the cake with deep-fried apples and serve with cream.
